- 3/4 cup almond flour
- 4 ounces cream cheese softened
- 4 large eggs whisked
- 1/4 cup unsweetened coconut milk
- Pinch salt
- Cooking spray
- 1/2 cup Dijon mustard
- 1 pound thinly sliced smoked turkey
- 8 slices provolone cheese
Combine the almond flour, cream cheese, eggs, and coconut milk in a blender.
Add a pinch of salt and blend until smooth and well combined.
Heat a large skillet over medium-low heat and grease with cooking spray.
Spoon in a few tablespoons of batter and swirl the pan to spread.
Cook until the edges are firm then loosen the crepe and carefully flip it.
Let the crepe cook until the underside is just browned then remove to a plate and repeat with the remaining batter.
Lay the crepes out flat and spread with mustard.
Layer the sliced turkey over the crepes and top with provolone cheese.
Roll up the crepes tightly and cut each into slices to serve.
